He takes particular pride in the recipe he has provided, saying, “This is my vegetarian version of a beer battered taco, utilizing nice, ripe avocados, and charred summer corn. Hiutlacoche (corn fungus) made into a sauce, give the tacos a taste of Umami, with a truffle-like finish. The nice balanced acid from the pickled nopales (cactus paddles) make this a well-rounded taco that vegetarians can appreciate. Viva Mexico!!”
